It was way back not long after the World war two had ended,
That the hankering for good barbecue lit a fire under George Stephen.
how at this time was a employee of a Metal Works just outside of Chicago,
George welded metal buoys for the Coast Guard.

But that’s not all he did: George loved to grill. With with a growing family at home, he found it the perfect way to relax, but couldn’t
find a grill on the market that lived up to his high expectations.

a product George found woefully under-engineered.

He knew there had to be a better way to barbecue.
One day, George was about to weld two buoy halves together when the idea hit: Why not use the bottom half for the cooking bowl, and the top half for the lid to create a grill? Piece by piece, his vision started coming together. He then added a handle and three legs and took hiscrazy-looking contraption home to test.

But As the story goes, when George first tried out his prototype, it didn’t work quite as hoped. No matter how hard he tried, it just wouldn’t stay lit. but a neighbor peering over the back fence offered a little friendly advice, “Poke some holes in that thing so the fire can get some air!” well George did, and the flames of invention could finally keep burning.

The history of barbecues date before the years of war, where pork is a handy food staple in the South. Unlike cattle, pigs have been largely low-maintenance, may be disclosed to themselves, then captured later at barbecue when the House came from hungry hordes of battle. While these early, (semi-wild) pigs were certainly more difficult and requires preparation than a modern pig, they began a tradition for BBQ recipes which continues to be refined, even today.

Restaurants these days would be quite different than today barbecue specialty restaurant. Most of these past, BBQ restaurants evolved to go simple backyard barbeque pits, were often only open on weekends and then charged a competitive price for a dish full of grilled pork.

Because barbecue recipes have become large companies over the years, it is interesting to look back in history and realize that Genesis began when one person (probably an old trail hand) decided that they were not to share their recipe secret barbecue with anyone other than family and friends.

As America grew, it was barbeque restaurants with people traveling through the city, often across the country to visit this special restaurant, everyone speaks, "If you're in Memphis, you must try the barbecue at the Rendez-vous".

Barbecue is as much a party culture today, as in those there are long days in the West, with the best recipes BBQ is still guarded like gold.
